Strawberry Coconut pancakes


 Yesterday was our 1st anniversary! This year has been one of the best years of my life. I feel so lucky to have Cole he is the most understanding loving human. I have never had more fun in my life. Everyday is so exciting! Cheesing it up i know.. but It's true. I just feel so lucky. I woke up a little before Cole to whip these cakes up! ( He likes to sleep more than me hehe). I will share the recipe but please realize I just kind of made this up haha so it was a guessing game. If you give it a try let me know if you have any tips.

I grew up as a kid eating sourdough pancakes with frozen strawberry jam, so my idea was a twist on those flavors.

For the actual cake I just used a local mix from whole foods but to get the sourdough flavor I added two large scoops of greek yogurt. You can test out your batter raw and see if you want more or less, but remember the sweetness comes with the sauce.

The sauce - So I don't have a blender unfortunately ha but any mixer will work for this, I used a magic bullet. I put in a random amount of strawberries, I filled the cup a little over 1/3 of the way. Then I added 2 table spoons of real Maple syrup and then 1 large scoop may be even two of the greek yogurt. Put it all in and blend it up for some strawberry deliciousness.

Pour of that on top of your cakes, sprinkle some raw coconut shavings and you are good to go.
