Dinner for Two

I decided to cook a little dinner for my man the other night, to be honest it turned out better than I thought! We are foodies to say the least and one of our favorite things is gourmet cheese board. Of course with non other than my favorite local Utah cheese's, dark chocolate, fresh raspberries, and a sliced baguette. 
I think that the salad was my favorite part, baked brussels sprouts, whole almonds, goat cheese, kale leaves, and balsamic, yum. 
For the entree, tons of baked veggies, let me tell you how delicious and easy. Put your favorites in a glass dish, onions, broccoli, carrots, brussels... cover them with olive oil, and sprinkle with ( trust me on this) Ranch seasoning. Bake for 40 minutes at 400 degrees, turn over about half way through. YUM! 
Served with this I did an Alaskan Salmon, EASIEST PART OF THE MEAL, grab two fillet's, dab off with a paper towel,  smother in olive oil, salt and pepper, fresh lemon, and cover in onion, bake for 6 minutes at 450 degrees.  Serve with a side of dill sauce and some warm rice and you have yourself an easy, healthy dinner my friends. 
Lets not forget dessert, my favorite local bakery down the street, Tulie Bakery,  makes a mean chocolate cake. I had a hard time choosing between that, their lemon and their coconut chocolate. My mouth is watering just writing about this. But my man loves his chocolate, paired with a scoop of vanilla Häagen-Dazs
All in all this meal took an hour to prepare! Easy and delicious!
